Picture this: It was May 1978 in the bustling town of Norman, Oklahoma. A relatively unknown food joint opens up, but by 1980, it starts to gain a cult following as it gradually sprawls into the extensive Oklahoma City Market. Soon enough, Taco Mayo manages to spread its magic into neighboring states like Arkansas, Kansas, and Texas. I couldn't help but wonder what Taco Mayo did differently that resonated so well with the folks there.

So where exactly can you find a Taco Mayo?
Currently, Taco Mayo has a strong presence in the Midwest, with several restaurants operating in Arkansas, Oklahoma, Kansas, and Texas. I noticed that Taco Mayo's growth is slower than other chain restaurants, but I feel it gives them time to perfect their menu and service.
What makes Taco Mayo unique?
Digging a bit into their history, I learnt that Taco Mayo too had its fair share of challenges. Especially when they attempted a rapid expansion, which ironically resulted in a slowdown of their growth. Instead of quality, the focus shifted to quantity which led to an unfortunate breakdown.
To regain their momentum, they reinvented themselves as a 'Fresh Mex' joint. From a total makeover of their existing stores, Taco Mayo impressed me with their customer-centric approach, showcasing their ingredients to provide a unique dining experience.
Their strategic move not only positioned them as a healthier fast-food alternative but also invoked admiration for their ability to rebound. What stands out for Taco Mayo is their fresh approach to fast food, speedy service, and quality ingredients. This local brand, in my opinion, undoubtedly gives a stiff competition to larger chains in terms of quality and experience.
How about the spice levels at Taco Mayo?
Unlike traditional Mexican cuisine, Taco Mayo caters to all taste buds. If you are skeptical about Mexican food due to its reputation for being spicy, Taco Mayo will surprise you! They also offer hot sauce and jalapenos if you like things a bit fiery.
Taco Mayo offers a typical Mexican spread including burritos, Mexicali bowls, nachos, quesadillas, tacos, tamales, tostadas, and a range of traditional sides. They also cater to the health-conscious with options like fruit cups. You can even dig into a regional dessert, differing from store to store.
They also offer larger meal packages for gatherings, reassuring their dedication to meeting all catering needs, regardless of scale.
Absolutely, and it's remarkably simple! They offer choices like bean burrito, crispy taco, quesadilla, or a soft taco, paired with potato locos or a fruit cup. From what I have gathered, the kids seem to enjoy their meals here.
