During my visit to Tijuana Flats, a fast-casual Tex-Mex restaurant chain, I was taken on a culinary journey brimming with flavors, colors, and history. Dishing out lunch and dinner to hungry patrons, Tijuana Flats is a place where food is not just served; it's celebrated!
As I was chatting with the affable on-site manager, he shared that Tijuana Flats dates back to 1995. The brainchild of Brian Wheeler, the restaurant began in the cozy neighborhood of Winter Park, Florida. Fresh out of the University of Central Florida and armed with a loan from his dad, Brian turned his dream of owning a bar and restaurant into reality. He got a little inspiration from a Mexican restaurant in Gainesville called Burrito Brothers, which gave birth to Tijuana Flats; a favorite among college students, millennials and foodies alike.
The joy of eating at Tijuana Flats is way beyond burritos and tacos. My personal adventure was incomplete without their chimichangas and quesadillas, and not to mention the crispy wings. An interesting pointer for hot sauce fans, the restaurant isn't shy of experimenting with flavors. Shuffling between sweet and extra spicy, their sauces never fail to impress. I even found the courageous ones amongst us opting for the "Smack My Ass and Call Me Sally," daringly spicy and intriguing flavor.
What beguiled me about Tijuana Flats is how it is more than just a restaurant. It is an art gallery in its way with mural paintings adorning the walls. Striking and vibrant, they capture the essence of the place. Before his demise in 2008, artist Christopher Galipeau had the honor of painting murals at several of the Tijuana Flats outlets, including their very first location.
From a warm dream to franchise locations in five states, Tijuana Flats' journey is commendable. In 2015, the torch was passed on to AUA Private Equity Firm. And the rest, as they say, is history.
