On my visit to the Capital Grille, a prominent steakhouse chain speckled across the United States, I was on a quest for a refined dining experience, complete with juicy steak, fresh seafood, and a tantalizing salad. A tip from a wine connoisseur friend had also led me there; apparently, they have an impressive wine list.
They are well-loved for their upscale, business casual ambiance which I found considerably appealing as compared to deluges of average, casual dining spots. The majority of their locations serve both lunch and dinner, fitting perfectly with my eccentric eating schedule. However, some are dedicated dinner-only spots, tailoring to their specific clientele's needs.
Covering over 60 locations in the US such as Maryland, Arizona, California, Boston, Washington, DC, Florida, New York, New Jersey, Columbia, and North Carolina. What amazed me was that they even have footholds in international locations, like Costa Rica.
As I dove into the history of the restaurant, I discovered that Ned Grace founded Capital Grille in 1990. In an unexpected move, he opened the first location in Providence, Rhode Island, an area well-known for being rundown at the time. What astounded me was his audacity of starting this upscale steakhouse during a recession; an epitome of taking a standard cliche – “hit while the iron is hot” – to a whole new level. Grace's vision of the restaurant being a hub for politicians and business tycoons quickly became a reality. In just 7 years post opening the first The Capital Grille location, the restaurant raked up an impressive $4 Million in sales. Grace soon expanded the spiced trail to other locations like Boston and Washington, DC in 1996.
In due time, the restaurant came into the proud ownership of Darden Restaurants, an owner of a chain of restaurants in the US including Olive Garden. As of 2023, Darden Restaurants is still the proud owner of The Capital Grille.

So, why The Capital Grille?
The Capital Grille, one of the most recognized steakhouse chains in the US, certainly stood apart in my journey through culinary landscapes. Firstly, my pool slides and torn jeans stayed home as the restaurant had a business casual dress code. This vibe agreed with a fancy, upscale dining experience that I was looking for; Perfect ambiance for business lunches, charming dates, or corporate dinners.
Their steaks set them apart in the sizzling world of grills. And for good reason! Each steak is dry-aged for 18-24 days before being expertly carved by the restaurant's in-house butcher. This process has earned them bountiful praise for the unique texture and flavor of the steaks.
What took the cake was their extravagant wine list. With over 350 labels from around the globe, every sommelier's dream would come true here. The conversant wait staff took me on an irresistible and unforgettable journey of steak and wine pairings.
Depending on the location, I found that some served regular menus along with couple of daily specials, while a few were more dinner-centric, leaving out the lunch offerings.

I was taken by their vast menu. Items such as Bone-In Ribeye Steak, Tuna Tartare, Lobster Mac and Cheese, Tenderloin with Butter Poached Lobster Tails became instant favorites.
